Spicy Black Bean Burgers

Last post, I was talking about the PC Salsa, which is very good (put it on Quinoa today for a yummy treat). Today, I am going to talk about these yummy things, which is what I used the Salsa for.

The original recipe is from the Vegan Table. Naturally, I have updated it:

  • 1/4 cup spelt flour
  • 1 onion, diced
  • 2 big jalapeno peppers, minced, with seeds in
  • 1 red pepper, diced
  • 4 garlic cloves, minced
  • 1/2 tsp oregano
  • 1 can black beans, drained and rinsed
  • 1/2 cup spelt bread crumbs
  • 2 tsp chili powdert
  • 1/4 tsp cumin
  • 1/2 tsp salt
  • 2 tbsp cilantro, minced
  • oil, for cooking

In saucepan (with oil) over med heat, cook onions, garlic, jalapenos, red pepper, and oregano. Saute until the onion becomes translucent. Remove from heat

Put black beans in a bowl, and mash with a potato masher. Stir in hot mixture, along with everything else except the flour. Mix well.

Make into patties, flour the outsides to help it stick together. In frying pan with oil, cook each pattie about 3-4 minutes each side, until golden.
