Pasta w/ Zucchini – Quick & Easy Recipe

Yesterday on Facebook, a former co-worker posted that he was wondering about people’s quick and healthy recipes. I naturally posted to check the blog. However, last night I made this. It was super easy to make, so I thought I would post it here for him. This is super easy to make, completely customizable, and really tasty!

  • Kamut Pasta – a pot worth
  • 2 zucchinis, sliced thin
  • 1 onions, sliced and diced
  • 4 cloves, thinly sliced
  • s&p to taste
  • basil
  • olive oil

I tend to use Kamut pasta, but you can really use any type you want. In a frying pan, add some oil. Fry the onion and garlic in the oil, stirring constantly for about 5 minutes. Add the zucchini and then s&p and basil on all the pieces.

While that is frying, cook the pasta to the consistency you like – boil water, add salt and pasta, cook until done, drain.

After the zucchini has cooked for a few minutes, stir and flip all the pieces, and keep cooking until you get it the way you like it. Some like zucchini harder, others more well done.

Once done, pour everything (oil and juices and all) into the pot that had the pasta, and then add the pasta back in, and stir.  

If you are not vegan, then add cheese! Obviously, I didn’t.
