Cosmic Cookies

Everyone who knows me, knows that I am spoiled when it comes to desserts. My wife just might be the world’s best baker. The skill when it comes to cookies – not only beautiful looking, but tasting amazing – is second to none. That is a skill that she has, which I simply do not have. I am okay. But I am the type that needs to follow a recipe exactly, and then pray. She on the other hand, can sub one thing, change another, and then are amazing.

One of her co-workers gave her a recipe – Cosmic Cookies. She took it, and Veganized it. Also made some Frank changes, and here is the result. Delicious! Here is the recipe:

  • 2 1/4 cups a combination of cooked Quinoa & puffed Quinoa (about 1/2 of each)
  • 2 cups spelt flour
  • 1 cup sunflower seeds
  • 1/2 cup shredded coconut
  • 1/4 cup flaxseeds
  • 1/3 cup sugar
  • 1 tbsp cinammon
  • 2 1/4 tsp sea salt
  • 1 3/4 cups Carob Chips (like chocolate chips, without chocolate or milk)
  • 1 1/4 cups currants
  • 1/4 cup water
  • 1/4 cup, +1tbsp molasses
  • 1/3 cup canola oil
  • 1 cup almond milk

Preheat over to 350f

Combine the dry ingredients in one bowl, and the wet ingredients (the last 4) in another bowl. Mix both bowls separately. Start combining by scooping a bit of wet into the dry and then stir the dry. Repeat until you get a combined dough. YOU WILL HAVE LEFTOVER WET. Do not combine all the wet, or you will end up with a really runny dough, and that makes cookes tough.

Using a spoon, scoop dough onto a cookie sheet (with parchment), and flatten a bit before baking. In the over for 24 minutes, or until lightly brown.
