Fritter Day, Part 2

Yesterday, I posted part 1. In there, I explained that I read an article in the Metro Newspaper (the food section, under Dinner Express). Anyway, I decided to make these, with a couple of alternates that I prefer.

Spicy Lentil Spinach Fritters

  • 1 can lentils, drained and rinsed
  • 3.5 cups of fresh spinach, washed and chopped
  • 2 tbsp of chopped green onions
  • 1 tbsp chopped cilantro (mine is frozen)
  • 1 tbsp chili flakes
  • 2 tbsp flour (spelt flour)
  • 1 tsp cumin
  • salt to taste
  • 1/4 tsp baking powder
  • 3 cloves of garlic, minced
  • oil for the pan

In the food processor, add the lentils with 3 tbsp of water. Pulse until smooth. Remove from processor into bowl.

Add everything else except the oil, and mix well. Make into patties.

Heat oil, and cook the patties 2-3 minutes each side, until brown. I personally found that if you don’t mind things extra well done (re: almost burnt), it would make a difference, as they were cooked, but could have been cooked more in the middle. Otherwise, they are quite tasty! Almost like having eggs in there!
