Recipe – Spelt Pizza Dough

This is a very simple pizza dough, and it works very well.

  • 3 1/3 cups Spelt Flour, plus some for the countertop/rolling/kneading/etc
  • 1 1/4 tsp salt
  • 1 tbsp yeast
  • 12 oz warm water
  • 3 tbsp olive oil

Put yeast in water to proof it. It will be foamy after 10 minutes. Mix dry ingredients together in bowl. Add water a bit at a time to dry ingredients, and mix. Then add oil, until a dough forms

Put on surface with flour, and knead for 10-15 minutes, until dough is smooth and not sticky. If you are fortunate enough to have a KitchenAid mixer, use the dough  attachment and let it do the work for you.

Once done, put in bowl again, cover, and leave it in a warm place to rise for an hour. I lock it in the bathroom, as the vent heats it up really nicely. It will double in size.

Remove from heat, and remove from bowl. Punch the dough, show it who’s boss! Then cut it in half.

With each half, roll it out with rolling pin to the size you want, and let it sit for 5 minutes.

Add toppings, and bake in oven (400 degrees) for 10 minutes. At this point, I removed it from the pan, and let it heat for another 5 minutes on the rack, to harden the dough more.
